Teochew-style fine dining at the top floor of the Chinese Swimming Club building. I was suckered here with a coupon in my mailbox promising me dollars off my order. This restaurant is part of Paradise Group Holdings that owns several Chinese restaurant chains in Singapore. This is the first restaurant in the group that specializes in Teochew food. They do a modern spin on many classic Teochew dishes. (I do admit, the authenticity of the dishes are a little suspect, they are not "old school" the way the aunts and grandmas like it) The menu is rather extensive and I had a hard time deciding what to order. I particularly enjoyed the Teochew Three Varieties combination (Consisting of the Teochew Pork Roll, Teochew Prawn Ball, and Pan-fried Scallop with Minced Garlic) and the Stewed Duck with Yam in Casserole. The combination was well executed, with the items perfectly fried and served in bite sized pieces. The duck casserole arrived in a clay pot, and is amazingly fall-off-the-bone tender and flavorful after simmering in the broth. For the uninitiated, Teochew refers to Chinese people native to the Chaoshan region of eastern Guangdong province (aka somewhere in Southern China) who speak a particular Min Chinese dialect. The food from that region is known to emphasize freshness of ingredients and less spice, and employ stir frying, poaching, steaming and braising as the predominant cooking methods. Just to note that the restaurant serves Teochew cuisine with a high end presentation with some other influences and might not suit the "old school" or "authentic homestyle Teochew food" diehards among you. The only gripes are that parking is pretty hefty, and there are limited lots. Most of the lots are reserved for members. They do not validate parking either. The fine print on the coupon also prevented me from using it that day. But as the pictures suggest, the food pretty much makes up for it. Bring your family, an empty stomach and a credit card.
